How do you tell a premium
quality coconut oil from the rest? The highest quality
coconut oils are a pure white when solid (below 76 degrees
F) and crystal clear when liquid (above 76 degrees F). This

Lower-quality oils are made from
sun-dried coconut (copra) that is often contaminated with
mold and bacteria. This type of oil may be slightly yellow
or gray. The discoloration is caused by residual
contaminants in the oil.
All virgin coconut oils are
made from fresh coconuts, never from copra. Most virgin oils
are cold pressed but in further processing require added
heat to remove residual moisture. If the moisture is
not removed the oil will have a very limited shelf life
(less than 3-6 months).
This heating process gives the
oil a roasted or smoky flavor you notice with many brands
and which many people find disagreeable. Although some
people will claim that their oil is “cold pressed” or even
raw, you can tell if heat has been used in processing by the
flavor.

without the roasted taste.
